ASPH proteins exhibit enzymatic specificity by selectively hydroxylating aspartate (Asp) or asparagine (Asn) residues within specific epidermal growth factor-like (EGF) domains of the protein. This site-specific hydroxylation regulates post-translational modifications of EGF-containing proteins, potentially affecting their conformation, stability, or interactions.
